Banish your biscuit cravings
With these guilt free protein cookies. With each one containing around 9g of protein, these are a great snack on the go or as a nostalgic bedtime treat when paired with a glass of milk; try using almond instead of cow this time around. The recipe is also super simple meaning you can play about with the ingredients to suit your personal taste. It’s better to get your carbs in early so if you find yourself with a sweet tooth after dinner why not give these a try? Low carb + high protein + good fats = good times
Ingredients -
Preparation time around 20 mins
2 Bananas (the browner the better)
50g Rolled Oats
50g Pure Whey (I used Spartan Protein here)
60g Cashew nut butter (Raw Cashew nuts and Olive oil blended together)
1.5 tbsp of Cacao Powder (I used Funktional Foods here)
2 Handfuls of dried fruit (I went for Cranberries & Raisins)
1 cal Fry Light Butter Spray
Raw Cacao nibs (if you want extra crunch)
Method -
Preheat oven to 170C or Gas mark 3 for fan assisted or 150C for non fan.
Blend 60g of Cashew nuts in a blender with around 2 glugs of Olive oil, until you get a smooth paste.
Add all your ingredients to a mixing bowl and mash/mix together.
Spray your baking paper with 1 cal fry light spray.
Spoon on the mixture onto the tray, into your desired.
Then bake in the oven for around 12 mins. Once baked leave to cool.
These cookies are way healthier than the shop bought alternatives out there and the above mixture provides around 8-10 cookies.
