Carrot Cake Energy balls
My energy giving balls are a simple no-bake 5 ingredient recipe. Tasty, macro friendly and taste just like cake, carrot cake! The measurements listed below makes around 8 balls providing about 115 cals 9g protein, 6g carbs & 6g fat per one. After the first batch, I decided to coat/roll the balls in chia and the others in cinnamon & cacao before freezing both worked well!
Ingredients -
Chocolate Protein 60g (whey or vegan)
Meridian's rich roast Nut Butter 80g
1-2 Carrots
Rolled Oats 50g
1-2 tbsp Cinnamon
Water
Method
Finely grate your carrot then add all ingredients to a mixing bowl.
Add a little water and mix with a spoon until the nut butter breaks down a bit then get your hands in there and start to press it all down to help it bind. Add a little more water if needed. (go easy on the water small amounts at a time)
A lot of pressing down until the mixture is more solid and you can make it into a big ball.
Then start tearing off small chunks and forming into small balls. Place them into the freezer for a few hours then they can be kept in the fridge for a few days
